beta-Cyclodextrin, Reagent is cyclic polysaccharide comprised of 7 glucopyranose units. This ingredient appears as a solid and functions as a chelating agent. Cyclodextrins are able to form host-guest complexes with hydrophobic molecules and are used in the production cholesterol free products. Beta-cyclodextrin complexes with certain carotenoid food colorants have been shown to intensify color, increase water solubility and improve light stability. Polymeric microspheres made with beta-cyclodextrin show high oil-absorbancy. Its reagent grade means this is the highest quality commercially available for this chemical and that the American Chemical Society has not officially set any specifications for this material.
